I’ve been loving simple keto swaps lately, so that’s why I was excited to try this simple keto enchiladas recipe.  I love using homemade keto tortillas in my recipes, but sometimes I just don’t have the time or energy to make them from scratch.  I also hate to spend money on the storebought ones because let’s face it, they all taste terrible.  This recipe ditches all of that by using rolled up lunchmeat.

I know you’re probably like, “Wait, what?” I was too, but the ham slices are a perfect stand-in.  They are just strong enough to hold everything together but soft enough to easily cut through with a fork.  Plus, the taste is fantastic.  Honestly, I’m kicking myself for not trying this earlier!

Crab cakes can easily be made keto with a simple swap for bread crumbs, but today we are going even further to make a keto crab cake that is crab-less! That’s right, a vegetarian-friendly crab cake with absolutely zero meat that still achieves that flakey interior and a crisp buttery crust!

The secret ingredient in these crabless cakes is hearts of palm. This vegetable is harvested from the core of many different varieties of palm trees and is nutrient dense yet low in net carbs. Its flavor could be compared to an artichoke in that it’s mild and slightly briny but pairs well with cheesy dips or a buttery crumb coating. The texture of this vegetable is very similar to lump crab meat when carefully broken apart with a fork or gently with clean hands.


Because there is some moisture in the hearts of palm, this recipe calls for almond flour in the crab mixture as well as a bit more to coat the cakes. This keeps them from falling apart while giving you a beautifully browned and crisp coating. Pan frying is also crucial to keeping them together and gives the cakes the proper texture.

Serve these crabless cakes with your favorite dipping sauce or as a patty on a bed of lettuce! These cakes are best served immediately but will hold up to reheating for up to three days. These crabless cakes make a great option for lunch or even a keto dinner.

Hulled hemp seeds are one of the only plant sources for a complete protein. Just a tablespoon or two adds much-needed amino acids without adding a significant amount of carbohydrates, not to mention the nutty flavor boost!

When grilling or searing the mushroom, remember that mushrooms have a lot of moisture. You want to heat the exterior of the mushroom quickly without cooking it so long that it becomes too soft.

If you have difficulty finding the large mushroom caps, then this recipe also works with the large sliced portobello mushrooms that are often in the produce section. Prepare them the same way then fry them in a cast iron pan or a dark coated skillet to create a savory side dish!

If you have been wanting to try tofu for the first time, this recipe is perfect for beginners!

Tofu takes on the flavor of what food or sauce it has been cooked with, which makes it very versatile in vegetarian and vegan keto cooking. This recipe combines sweet with spicy in a thick and creamy peanut sauce and is wrapped in a leafy lettuce cup. These are then topped with crunchy peanuts and fragrant green onion for extra crunch!

In typical tofu preparation, you must press the tofu to remove the extra water. This means wrapping the block of tofu in a clean towel and applying pressure to squeeze out the extra water. Today you can find “pre-pressed” tofu in the grocery store which takes the extra time and labor out of your meal prep! I prefer extra firm, also known as super firm, but in general firm tofu will also work with this recipe. If you can’t find pre-pressed tofu, then try to press out as much water as you can.

The sauce is kept gluten-free by using a soy sauce alternative called liquid aminos. Traditional soy sauce will work in this recipe as well, though it has different macronutrients that will change the final carb count of the recipe so I highly recommend using this substitute.

It’s time to get comfy and cozy with a delicious bowl of cheese and broccoli soup! This keto recipe is pretty easy to prep and execute. It is a great meal to make quickly before relaxing by the fire during fall or wintertime, or as an appetizer before dinner.

This loaded cauliflower casserole is easy to make with minimal prep time and takes only an hour to cook. To reduce prep time, you can buy pre-cut mushrooms and jalapenos from the grocery store. Make sure chicken is thoroughly cooked before serving! Loaded Cauliflower Casserole is great for wintertime keto dinners and weekly food prep. The Shepherd’s Pie fans in your life will love this, and the chopped jalapeno gives it a warm kick.

Egg rolls have always been one of my favorite side dishes. I’ve been finding new ways to use cabbage lately and had the idea to make these steamed pork cabbage rolls. Instead of putting shredded cabbage inside, the cabbage makes a great roll filled with savory ingredients and a bit of spice from freshly grated ginger.


These don’t have a fried layer like a traditional egg roll, but that doesn’t make them any less flavorful! The dipping sauce is optional, but it adds a burst of spice that completes the flavor of the rolls. Keep in mind the rolls are steamed, so when you bite into them you’ll get a nice and tender crunch.

For this recipe, you’ll need a steamer basket, vegetable peeler, and grater. If you don’t have a steamer basket, a metal strainer that fits over your pot and hooks onto the side will work as long as you are able to keep the food elevated out of the water.
